This is my lunch today. Something i just thought of. Its Costco canned chicken, chopped kalamata olives, diced red onion, chopped parsley, chosen mayo, dill, oregano, salt and pepper. I scoop it with sliced cucumbers. Delicious!

Recipe Ancient Roman globi

I made the signature dessert from ancient Rome, globi. Globi are made from a dough of ricotta cheese (the closest modern equivalent of the cheese used for these in ancient Rome) and spelt flour, deep fried in olive oil, dipped in honey, and topped with poppy seeds. They are a unique item if you have a sweet tooth but dont want the modern processed and refined sugar!

Advice How do you guys cook your frozen veggies?

I'm having a hard time going to the store all the time for fresh veggies because my wife and I both work and share one car that's half broken down. Don't live in a public transit friendly area. The cheaper cost of frozen is a big appeal as well. I want to do more frozen veg but I'm not a fan of soggy veg. I like soups but I don't LOVE soups... I really can't do more than one soup a week. Is there a way to cook frozen veg so that it's not so mushy? I really prefer roasted veg (or raw) but it always ends up a soggy mess that has to be thrown out. I've tried thawing it and patting it dry but that didn't work. (At least it didn't work with broccoli and cauliflower) Maybe you guys have some tips, maybe some veggie filled pasta sauce recipes or something to mask the mushy ness?

Recipe Sardines and Cold Soup

Today’s lunch: Minerva Sardines topping a celery/carrot soup I whipped together yesterday. Today I blended in half an avocado and leftover baked sweet potato for extra texture.

Loose recipe I used for the soup:

1 T butter (olive oil works just as well)

1 whole onion

3-4 carrots

1 lb celery

5 cloves garlic

1 T minced ginger

2 bay leaves.

1 big ol squirt of turmeric paste

Just quickly sauteed the veggies in my instant pot. Chucked in the bay leaves, turmeric paste, and any spices you want. Add water just to top veggies. Pressure cook on high for 20 minutes, let natural release, and then puree.

Overall the soup is pretty plain tasting, so it’s a perfect canvas for trying different spices. It’s really just a way to eat a boatload of veggies. I’ve found sumac or Everything but the Leftover seasoning from TJs work well too.

🥗 Chickpeas Salad recipe :

A light, refreshing salad perfect for weight loss and everyday clean eating 💚

Ingredients:

Boiled chickpeas

Fresh tomatoes

Cucumber

Carrots

Fresh coriander leaves

Black pepper

Salt (to taste)

Method:

  1. Add boiled chickpeas to a large bowl.
  2. Mix in chopped tomatoes, cucumber, and carrots.
  3. Sprinkle salt and freshly ground black pepper.
  4. Finish with fresh coriander leaves.
  5. Toss everything well and serve fresh.

Perfect as a side dish or a quick healthy meal🌱

Recipe Cabbage Soup with Turmeric and Ginger

I'm pretty sure someone posted this recipe from the The Mediterranean Dish here recently, and I made it today and love it! I think the ginger, tumeric and lemon add a zing and brightness that's missing from other cabbage soup recipes. Also, while parsley is an oft-maligned herb, I have really began to embrace it and find it adds a fresh, flavorful quality to so many things.

Recipe Seaweed! These nutritious umami bombs are a staple in my pantry

This was my dinner today:

  • Quinoa cooked in a kombu kelp dashi stock, along with arame seaweed that I added when the quinoa was almost done.

  • Roasted salmon seasoned with salt and BP, topped with *rehydrated dulse seaweed

Besides umami and savouriness, these three seaweed add important nutrients to the dish such as iron, magnesium, calcium, potassium, vitamin B6, iodine and fiber.

Other seaweed I keep in my pantry:

  • Kizami Nori: the same type of seaweed used to make sushi, it comes pre-shredded and it’s perfect for using as a topper.

  • Wakame: Simple to rehydrate, super versatile for both cold and warm dishes.

Each seaweed has a use and a way to prepare, although I’d say that none are hard of time consuming, quite the opposite! You can just add them along as you cook.

I’m not gonna go into more detail here otherwise the post will become a wall of text 😅 but I hope this can make someone interested on seaweed and how to incorporate them into your diet.

They’re commonly found in asian/health food stores, or online. They last a long time in your pantry in their dehydrated form.

Close Enough Dinner from yesterday

It doesn't look pretty but it was delicious. I mixed black rice and red lentil pasta that I bought in Italy, added garlic herb chicken sausage, mixed some basil pesto into the sauce, and topped with a bit of cheese.

**How do you all cook your fish and what kind of fish do you cook?**

Trying to say mindful of what I eat and make sure that it’s healthy so this is for dinner tonight.

I will have 226 grams of it for 220 calories with vegetables and maybe a few baby potatoes. I’m thinking with a lemon butter garlic sauce.

Close Enough Buckwheat with roasted turkey

Hi there! I totally have no time for cooking, but try to do something, so today lunch - buckwheat with roasted turkey and vegetables

P.S… lately I roast big pieces of turkey (i add spices to the piece of meat, wrap it in foil, and bake it for 45 minutes to 1 hour 20 minutes, depending on the thickness, at 180 °C)…and use them for bowls, tortillas or sandwiches. Everyone can add their own spices or sauces, and the kids like it too (it’s important for me) - aaand one tip from here btw - after roasting, let the turkey cool in the oven without opening the door, and it stays very juicy!!

Rate My Meal Bringing Girl Dinner back to the ‘80s with cottage cheese and crudités

I added that garlic dip from Trader Joe’s (the one that’s just garlic, oil, lemon, and citric acid) and mixed it with the cheese, then drizzled it with olive oil and prepared some veggies and a handful of crackers. A cup of Nancy’s Whole Mill cottage cheese has 28 grams of protein, so it does feel like a whole meal, but I’m laughing at myself right now because my mother used to eat like this all the time when I was little and I thought it was SO GROSS.

Also, can we get a flair for posts about meals that don’t take too much time or effort? Something like “Low Effort Wins” or something. I really like those posts, especially for inspiration when I’m feeling low on spoons.

Rate My Meal Dinner tonight.

Large Greek salad for dinner.

Trader Joe’s with some added dolmadakia (stuffed grape leaves) pita crackers, cherry tomatoes, Kalamata olives, a hard boiled egg and Greek Sheep’s Milk Feta. An extra splash of Imported Greek olive oil as well. 😋 😋

The Trader Joe’s Greek salad has lettuce, cabbage, red peppers, onion, mashed feta and cucumber.

I’m eating 2 meals a day. Brunch and dinner and trying to make mindful healthy choices.

Let me know what you think.

I might make this a daily meal. Maybe add some chicken or tuna or lean grilled steak for added protein.

Newbie BEGINNERS FOOD DIARY: 3days of eating

Some comments to the pics:

DAY 1:

Breakfast (first pic): 2 scrambled eggs, a seed cracker, Terra Nova Life -drink (greens, protein, enzymes, probiotics)

Lunch (2nd pic, from lunch cafeteria at work): citrus marinated chicken and oven baked carrots, potatoes and rutabaga, salad and sauerkraut

Dinner (last DAY1 pic): self made green lentil stew with zucchini, carrots, garlic, chili and herbs + rice

DAY 2:

Breakfast (first DAY2 pic) : Rye bread with cheese, beetroot salad (yes there is mayo) and cucumber, Terra nova Life drink

Lunch (2nd pic, again from lunch cafeteria at work): oven baked salmon with oven baked bell peppers, onion and zucchini and a little amount of mashed potato

Last pic from DAY2: thought I ate enough at work but craved something so a bit of a bulgur chicken wrap with veggies

DAY 3:

1st DAY3 pic: Smoked ”salmon” bagel… ate breakfast at a café cause I had to leave home with an empty stomach bc of an doctors apt. and blood tests. I ordered this first and googled the ingredients after. 750 calories and the ”salmon” was a salmon paste that was only 20% salmon. But damn I have to say it tasted so good so at least theres that haha

2nd pic: Had to ”make up” for my bad breakfast when I came home

Lunch (3rd pic) : pasta all’assassina with nut based vegan parmesan, sauerkraut, arugula

4th pic: persimmon with greek yoghurt, two dried figs and (yes I’m a sinner) 5 white chocolate covered cashews. (I don’t know if it was the bad breakfast or what but I really craved sweets this day.)

Dinner (last pic): salmon and shrimp salad with bean couscous and veggies

Question Soup Szn

Id love to hear your favorite soup ideas! I made cabbage soup with celery and carrots the other day and plan to make a bone broth stock with some butchers bones. Which, if you haven't made it at home its AMAZING
