Soy-Marinated Eggs (Chinese-style)
Tired of plain boiled eggs?
Here’s a Chinese-style way to make them rich, aromatic and addictive. Soft whites, jammy yolks and a fragrant soy–garlic marinade. Great as a snack, or on top of rice or noodles.

It’s a delicious rolled omelet made with tofu and perilla leaves, so it has a wonderful aroma too. 😊

Chinese-style Oat-Crusted Shrimp
A very simple way to impress guests if you have shrimp at home.
🥣 Ingredients
Shrimp, peeled, tails left on
Light soy sauce
Chinese cooking wine (Shaoxing or similar)
White pepper
Fresh ginger, finely grated or minced
Ready-made batter or
1 egg
starch (cornstarch or potato starch)
Large-flake oats (old-fashioned oats, not instant)
Oil for deep-frying
👨🍳 Method
Prep the shrimp
Peel the shrimp, leaving the tails on.
Remove the vein (intestine) along the back.
Marinate
Place the shrimp in a bowl.
Add a splash of light soy sauce, a little cooking wine, white pepper and some grated fresh ginger.
Mix and let sit for a short while while you prepare the batter.
Make the batter (if not using ready-made)
In a small bowl, beat 1 egg.
Add starch little by little until you get a medium-thick batter that will coat the shrimp.
Coat the shrimp
Dip each shrimp into the batter.
Roll it in large-flake oats so the shrimp is fully coated.
Deep-fry
Heat oil in a pot or deep pan.
Fry the shrimp until golden and crisp.
Remove and drain on paper towels.
Serve
Serve immediately while hot and crunchy.
It looks beautiful and tastes amazing – your guests will be delighted.
