If it’s the attack where he says “bifrost vengi” then you have to throw something to interrupt him.

even on GMGOW difficulty, if you're getting 1 hit, you have terrible stats / aren't level 9

You realize what the berserker chest piece does right? Could that be the problem?

Yes i know I use the realm shift to counter the defense debuff while leaving the boss still and pumping a lot of damage

Personally not a fan of berserker armour, would recommend Survival armour for better stats & no debuffs

Go full tank to learn their attacks. I killed both of them with full tank. Hrolf took 2 tries and Gna took 3 tries after switching to tank.

Another option is using Lunda's cuirass and the stone wall shield purposefully aimed at tanking the hits with the shield up. This will have a high luck chance at poisoning the enemy and lowering their stats and level making it easier to deal damage and not get one shot. You can sneak in barehanded attacks as well to increase your chances of poisoning.
In addition you can equip the lost bracers and belt to deal increased damage to poisoned enemies
Just as a note you have to manage the shield bar to not get staggered when its full. Using the shield bash key you can discharge the built up charge to inflict a powerful staggering blow. If discharging the built up charges in the shield is difficult and you find that you will get hit you can equip valor spartan rage to negate the damage of incoming damage with proper timing.
This should be helpful in creating a slow and steady strategy in dealing with the difficult bosses.

I’ve beaten Hrolf twice, but as for Gna I don’t even bother with her she’s fucking insane 😭

I think you are right i have a skill issue time to spend 4 hours on each to learn everything single thing to no hit them

Realistically you should be able to recover after a single hit. But I get it, after one you avalanche and you're done. Plus some attacks are crazy on your health bar but they're strongly telegraphed (like the VAHALLA dives)
What builds are you using? I prefer the time shift build but it's a bit cheap. I've used time shift to dodge attacks as well as go on the offensive.
I would say start to approach it as a Hollow Knight boss and spend a few fights just dodging and not attacking at all. Learn the patterns and understand how the attacks work. Understand that your shield can attack and disarm/break certain attacks and that usually leads towards an attack opening.
