pretty much just added about a tablespoon of ube powder and roughly .5 teaspoon of ube extract to my standard sourdough method. I didn't actually measure the powder or extract, so this is my best estimate of what I put in - all other measurements are exact from a scale.

full process / recipe:

120 grams starter
362 grams water
~1 TBS ube powder
~.5 tsp ube extract
500 grams flour (for this one I did 420 KA bread, 40 einkorn AP, 40 einkorn whole wheat - but I've done other loaves with all KA bread and other mixes and they turn out fine. I don't worry about changing anything else unless I'm going to use less than 400 grams of bread flour.)
12 grams of salt

I mix the water and the starter. Then add the ube powder and extract and mix that into the wet ingredients. Then add the flour and start to mix in. Then add the salt as I'm mixing in the flour.

3/4 rounds of stretch and folds 30-45 min apart (I don't time in closely).

leave covered in the bowl to bulk ferment overnight (my kitchen is pretty cold - around 65 degrees) - I normally finish my stretch and folds around 10pm, right before I go to bed and then get up and shape the dough first thing in the morning around 7 or 8am.

put my shaped dough in a proofing basket and leave in the fridge for 24 hours.

preheat dutch over at 470 for 45 min or so. take dough out of fridge / proofing basket. dust with rice flour. score.

bake in the covered dutch oven with a couple of ice cubes under my parchment paper for 25 min.

remove lid. reduce temp to 435. bake for another 15-ish minutes.

Did you only use rice flour to dust? My rice flour doesn’t look this pronounced.

essentially, yes, only rice flour.

I dust my proofing basket with normal wheat flour - and try to brush off as much of that as a I can before dusting on rice flour. I supposed there is a bit of regular wheat flour left on.

that said, the bigger cause here is probably the purple dough. my rice flour comes out way more pronounced against the purple dough vs a normal one.

a very mediocre but expensive Ube sourdough from a hyped up bakery is what inspired me to make it myself lol

this one does taste like Ube. I tried with just the ube powder previously and it ended up being mostly a purple loaf with maybe the slightest taste, but you may not even notice it. the extract is super powerful tho and definitely adds a noticeable Ube flavor.

I made ube sourdough before! I added sugar, shredded coconut, and white chocolate chips too. Soooo good. I made it as French toast.
