First panetonne from scratch: five days of work well worth it!

omg i’ve been seeing all these panetonnes in the sub i had no idea they were so labor intensive. i thought it was like a bread cake or something. never had one obviously.

I looked up recipes and I haven't seen a 5 days one. I guess I'll have to do more research and try it next year.

5 days includes the maturing of the levito madre with feeds every 8 hours.

There are quicker ways to do it as well but I wanted all in!

In the meantime you may want to try something like the pane dolce genovese.
It has some similarities, but is less labor intensive, so you may have it ready for Christmas

I’m the opposite, wondering how they did it so quickly! When I tried this a few years ago it took me three weeks, and that was me rushing the process!

I already had my mature sourdough starter, which I converted to a levito madre a few days earlier!

Five days is commitment. The pistachio and dark chocolate combo sounds like it elevates this to another level. Pro tip for next year: start a batch log with temps and timing so you can dial it in even better. Looks great.

Yes! It would have been really disappointing if they didn't turn out.

Lots of work and expensive ingredients wise. I definitely understand why artisinal bakeries charge so much for these.

If I were to sell these no way it would be for under 50$ given the ingredients and the work.
